Fig Balsamic Chicken

The recipe is quick to prepare and super delicious for the family. We find the Golden Delicious or Crispin apples work best in this recipe. (Serves 4)

4 boneless, skinless chicken breasts

1 apple, peeled, cored and chopped into 1-2 inch pcs

½ cup chicken broth

¼ cup

2 sprigs of thyme

1/2 Cup The Tangy Olive Fig Balsamic Vinegar (or to taste)
Preheat oven to 400 degrees F. Place chicken breasts in roasting pan. Scatter apples over chicken, drizzle the chicken stock and Fig Balsamic over chicken and shake pan gently to coat chicken. Nestle the Thyme sprigs around the chicken and bake uncovered for 20 minutes or until the internal temperature reaches 165 degrees. Serve with the apples and chicken juices over each breast.
